During his time at Tennessee, Gilbert became a fan favorite after delivering a walk‑off grand slam in the 2021 Knoxville Regional, a moment that still resonates with Volunteers supporters.
After being selected in the 35th round of the 2019 MLB Draft by the Minnesota Twins, he chose not to sign, later committing to the Houston Astros before making his MLB debut with the Giants in 2025.
